Biscoff Lovers Rejoice - Biscoff Brownie Recipe!


Hey beaut's!

It's been a while hasn't it...You might of noticed that the ole blog has had a bit of a face lift, it was time for a much cleaner looking blog and one that I was really passionate about, so you'll be seeing a lot of food and recipe content from now on! I'm kicking things off with a Biscoff bang, yup beaut's,  it's Biscoff brownie time. The brownies start with a crumbly Biscoff biscuit base which is then topped with the most indulgent brownie batter with that yummy Biscoff spread swirled through, I'm actually drooling right now!

What You Will Need - Makes 9 Large Brownies or 12 Smaller Brownies 
115g Unsalted Butter
100g Good Quality Dark Chocolate 
3 Eggs
200g Caster Sugar
50g Light Brown Sugar
95g Plain Flour
25g Cocoa Powder
1/4 ts Salt
120g Biscoff Spread
125g Biscoff Biscuits (crumbled)

How To
1. Firstly pre-heat your oven to gas mark 4 /180 and line your brownie tin with grease-proof paper.
2. In a bowl, melt your butter and dark chocolate together until it's silky smooth and glossy, you can do this in the microwave in short bursts if you like but I done mine on the hob bain marie style. One the chocolate and butter are combined set it aside to cool slightly.
3. Grab your biscoff biscuits and pop them in a sandwich bag and give them a good whack with a rolling pin until they have crumbled up, then sprinkle the crumbs in a thin layer on the base of your brownie tin, reserve a good handful for later on.
4. Pour both sugars into a bowl with the 3 eggs and whip up for a minute or so until the mixture is light and fluffy, then whack in your melted butter/chocolate mixture and mix through, this doesn't take long.
5. Gently mix through your flour, cocoa powder and salt until just combined then pour the brownie batter all over that yummy layer of Biscoff crumbs.
6. Finish off with generous blobs of Biscoff spread all over the batter then use a knife to really swirl that spread through the brownie batter, then top with a sprinkling of the Biscoff biscuit crumbs and bake for 25-30 minutes. 
And there you have it beaut's, some pretty epic brownies even if I do say so myself. If your a Biscoff addict then your going to love these!
