Today I'm back with the second recipe in my 'Basic Bakes' series. This series will include simple bakes and cakes as well as well known family favourites and I thought today it was time for the Lemon Drizzle Loaf to shine! Lemon drizzle is such an absolute classic and tastes sooo fresh and yummy, it's also a really easy bake and and has quite a small list of ingredients so it's perfect really!
175g Self-Raising Flour
175g Caster Sugar
1 tsp Baking Powder
100g Soft Unsalted Butter
2 Eggs
Finely Grated Zest Of 2 Lemons
2-3 tbsp Milk
What You Need For The Drizzle
50g Caster Sugar
Juice Of 1 Lemon
What You Will Need For The Decoration
50g Icing Sugar
2-4 tsps Water
Lemon Zest
How To
1. Pre-heat your oven to gas mark 4 /180 then line and grease a loaf tin.
2. In a large bowl, beat then butter and caster sugar with an electric whizzer until smooth, then pop in the rest of loaf ingredients and mix again until everything is smooth and well combined.
3. Then pop the cake batter into the loaf tin and bake for around 30-35 minutes.
4. Once your cake is cooked mix together the drizzle mix and pour it over the top whist the loaf is still in the tin, if you have skewers you can poke little holes in the top of the loaf to help the drizzle sink right through the loaf.
5. To finish the loaf off once it's cool and out of the tin, I mixed some icing sugar and water together for a very quick and easy icing, I then drizzled this all over the top of the loaf and finished off with some more lemon zest and voila!
And there you have it beaut's, a yummy lemon drizzle loaf that hardly takes any time or effort at all. Enjoy!
