Blueberry Crumble Muffins Recipe

 Hey beaut's!

We are now well into Spring, and Summer is creeping ever closer so I wanted to start incorporating more fruit into my bakes and cakes and the good ole blueberry seemed a good place to start. I do love a blueberry muffin but I decided to pimp the recipe up a bit and add a crumble topping, I've seen blueberry cakes like this before but never a muffin but I tell ya what....they're bloody delicious even if I do say so myself. The crumble topping gives them that extra crunch and makes them so versatile as not only can you have them for breakfast or as a snack but they make a great dessert too and can be served with custard or cream if you like!
What You Will Need For The Muffins
175g caster sugar
4 tbs vegetable oil
1 egg
120ml milk
225g plain flour
2 tsp baking powder
150g blueberries or as many as you desire.

What You Will Need For The Crumble Topping
50g melted butter
100g demerera sugar
50g plain flour
1 round tsp cinnamon 

How To
1. Preheat your oven to gas mark 4 or 350°F (177°C) and line a muffin tin with paper cases.
2. Before we get onto the muffin batter you need to make that crumble topping which is mega easy, just melt your butter then whack in the flour, demerera sugar and cinnamon and mix well and then set aside.
3. In a large mixing bowl, whack in your caster sugar, vegetable oil and the egg and mix with a hand whizzer until it's gone pale and smooth, then add in the milk and mix again to combine.
4. Once all of your wet ingredients are combined add in the flour and baking powder and mix again, then your going to want to add in your blueberry's and mix gently, I actually swap for my silicone spatula at this point and fold in the blueberry's as you don't want them to mush up or burst whilst mixing!
5. Pop a heaped tablespoon of the muffin batter (which is quite sticky in constancy) into each paper case then sprinkle the crumble topping over the top, you can add as little or as much of the crumble topping as you like, then bake in the oven for around 14-18 minutes, then transfer onto a wire rack to cool.

And that's it, these are so quick and easy to bake and honestly they taste soooo good, that crumble topping as well adds such a nice crunch to the top of the muffin but don't worry it doesn't make the top of muffin rock hard and the muffin itself is really light and fluffy! You have to give these a go if your a fan of the blueberry muffin beaut's!
