Oreo Cheesecake Recipe!

 Hey beaut's!

I'm sure you all know by now how much I love my bakes and cakes, I'm always sharing my sweet recipes on my blog but something I'd never attempted before was a cheesecake!! I'm a huge lover of Oreos (and cheesecake) so I knew my first ever cheesecake needed to be an Oreo one, I was also inspired by a recipe I found on Jane's Patisserie as her Oreo cheesecake looks immense, but I've adapted the recipe to suit me more!
What You Will Need - Oreo Biscuit Base
*2 packets or 300g Oreos, I used 1 pack of original and 1 pack of brownie flavour.
*100g Melted Unsalted Butter

What You Will Need - Cheesecake Filling
375g full fat Mascarpone or cream cheese. I used mascarpone because I found it much cheaper.
63g Icing Sugar
150ml Double Cream 
Half a tsp Vanilla Extract
100g Oreos, I used 50g of original and 50g of brownies flavour.  

What You Will Need - Decorations
150 ml Double Cream
2 tbsp Icing Sugar
12 Oreos + Oreo Crumbs

How To - Biscuit Base
1. Blitz up the Oreos to a fine crumb and pour in your melted butter and mix until it feels and looks like wet sand then pop it in a spring form tin and press down firm to pack those crumbs together. 
2. Pop into the fridge or freezer to chill/set whilst you work on the cheesecake filling.

How To - Cheesecake Filling
1. Pop the mascarpone or cream cheese, icing sugar and vanilla extract into a large mixing bowl and whizz together with an electric/standing mixer until smooth.
2. Once smooth, pop in your double cream and mix again until well combined and thickened.
3. Blitz up more Oreo crumbs and add them to your cheesecake mixture and mix well to combine.
4. Heap the cheesecake mixture on top of the biscuit base and chill in the fridge ideally overnight however, I made mine first thing in the morning and left it to chill all day until dinner time and ours was fine. Basically the longer you can chill it the better!
5. Once the cheesecake has completely chilled and firmed up decorate how you like, I whipped up some double cream and added swirls on top then I used left over Oreo's crumbs as sprinkles and broke Oreo biscuits in half to pop around where I had piped the whipped up double cream and voila!
What I love about using Oreo's is that it's that ultimate cookies and cream flavour and you can adapt it so much now that Oreo's come in different flavours, I think the peanut butter flavoured Oreos would work well in this for any of those peanut butter lovers out there!

Blueberry Crumble Muffins Recipe

We are now well into Spring, and Summer is creeping ever closer so I wanted to start incorporating more fruit into my bakes and cakes and the good ole blueberry seemed a good place to start. I do love a blueberry muffin but I decided to pimp the recipe up a bit and add a crumble topping, I've seen blueberry cakes like this before but never a muffin but I tell ya what....they're bloody delicious even if I do say so myself. The crumble topping gives them that extra crunch and makes them so versatile as not only can you have them for breakfast or as a snack but they make a great dessert too and can be served with custard or cream if you like!
What You Will Need For The Muffins
175g caster sugar
4 tbs vegetable oil
1 egg
120ml milk
225g plain flour
2 tsp baking powder
150g blueberries or as many as you desire.

What You Will Need For The Crumble Topping
50g melted butter
100g demerera sugar
50g plain flour
1 round tsp cinnamon 

How To
1. Preheat your oven to gas mark 4 or 350°F (177°C) and line a muffin tin with paper cases.
2. Before we get onto the muffin batter you need to make that crumble topping which is mega easy, just melt your butter then whack in the flour, demerera sugar and cinnamon and mix well and then set aside.
3. In a large mixing bowl, whack in your caster sugar, vegetable oil and the egg and mix with a hand whizzer until it's gone pale and smooth, then add in the milk and mix again to combine.
4. Once all of your wet ingredients are combined add in the flour and baking powder and mix again, then your going to want to add in your blueberry's and mix gently, I actually swap for my silicone spatula at this point and fold in the blueberry's as you don't want them to mush up or burst whilst mixing!
5. Pop a heaped tablespoon of the muffin batter (which is quite sticky in constancy) into each paper case then sprinkle the crumble topping over the top, you can add as little or as much of the crumble topping as you like, then bake in the oven for around 14-18 minutes, then transfer onto a wire rack to cool.

And that's it, these are so quick and easy to bake and honestly they taste soooo good, that crumble topping as well adds such a nice crunch to the top of the muffin but don't worry it doesn't make the top of muffin rock hard and the muffin itself is really light and fluffy! You have to give these a go if your a fan of the blueberry muffin beaut's!

Easter White Chocolate Cupcakes

Easter is fast approaching so obviously that gives me an excuse to get in the kitchen and get my bake on again, so today I decided to do some white chocolate chip cupcakes with white chocolate buttercream and finished them off with some mini eggs, definitely the perfect chocolaty Easter treat.
What You Need - Cupcakes
– 165g Unsalted Butter at room temperature
– 115g Caster Sugar
– 3 Eggs
– 165g Self-Raising Flour
- 1tsp Vanilla Extract 
– 2tbsp Milk
– 100g White Chocolate Chips 

What You Need - White Chocolate Buttercream Frosting
– 125g Unsalted Butter at room temperature
– 300g Icing Sugar
– 1 Large Bar of White Chocolate, melted
- Food Colour Gels (optional)
- Mini Eggs

How To 
1) To make the cupcakes Pre-Heat your oven to 180C/160 Fan/350F/Gas Mark 4 and line a cupcake/muffin tin with 12 cupcakes cases.
2) In a bowl, beat the butter with the caster sugar until it's light and fluffy and then add in the eggs, vanilla and self-raising flour and mix until well combined. If the mixture is too stiff you can add a little bit of milk a tablespoon at a time to get a smooth light consistency which is what I did. Finally stir in your white chocolate chips until they are even through the batter.
3) Spoon the mixture into the cupcake cases then bake in the oven for 15-20 minutes until they’re baked through and they are springy to touch.
4) To make the white chocolate buttercream firstly melt you large bar of white chocolate then set aside to completely cool, then beat the butter with an electric whizzer for a couple of minutes until it starts to go pale and fluffy then gradually add in the icing sugar and beat again for a few minutes, then add in your large melted bar of white chocolate to the buttercream and continue mixing along with food colouring of your choice. If you find your icing is slightly stiff once you add in your melted chocolate just mix in a small amount of milk to loosen it up a bit.
5) To decorate the cupcakes I just pipped on the buttercream, then I grated a little bit of chocolate onto each cupcake (white chocolate would be better for this but I had run out so I used milk chocolate instead) and the I finished them off with some Cadbury Mine Eggs to give them an Easter twist.
These where so yummy and really easy to make, and I think they look and taste prefect for Easter because not only is the buttercream in pretty pastel shades and decorated with mini eggs but the sponge and the buttercream both contain chocolate, yummy!
