Epic Oreo Cupcake Recipe!


Hey beaut's!

If your an Oreo lover then your going to love today's recipe, behold the Oreo cupcake! This cupcake is light, fluffy and chocolatey and the Oreo buttercream is honestly the stuff of dreams! 




What You Will Need For The Oreo Cupcakes
125ml Buttermilk 
125ml Cold Coffee
105ml Sunflower Oil 
2 Eggs
185g Caster Sugar 
135g Plain Flour 
45g Cocoa Powder 
1/2 tsp Bicarbonate of Soda 
1/4 tsp Salt 

What You Will Need For The Oreo Buttercream + Decorating
200g Unsalted Butter 
350g Icing Sugar 
75g Oreo Crumbs (It's around 6-7 Oreo's blitzed up)
3-4 tbs Milk
Oreo's for Decoration

How To - Oreo Cupcakes
1. Firstly pre-heat your oven to gas mark 4 /180 and line a muffin tin with your cupcake cases.
2. In a large mixing bowl, whack in all of your wet ingredients and mix until combined. You'll only need a hand whisk for this as it's quite a wet batter so it mixes easy.
3. Once your wet ingredients are combined pop in all of your dry ingredients and mix again with your hand whisk. 
4. Once the cupcake batter is smooth fill each cupcake case 3/4 of the way full, your'll probably find it easier to pop the batter into a jug first and pour it into your cupcakes cases that way. Bake for around 18-20 minutes or until the top of the cupcakes are springy to the touch, then transfer onto a wire rack to cool.

How To - Oreo Buttercream
1. Once the cupcakes are completely cool your going to want top them with the best buttercream known to man, so start off by grabbing a large bowl and beating the butter until it becomes smooth and whippy, then start adding the icing sugar slowly to avoid the dreaded icing sugar cloud and again mix until combined. 
2. Whilst the buttercream is whipping up (I used a standing mixer for mine) your going to want to blend up your Oreo's too a fine crumb, then whack the crumbs into your buttercream and mix well. If your find your buttercream thickens up keeping adding in a tablespoon of milk at a time until you get a nice soft, whippy buttercream!
3. Pipe or spoon the Oreo buttercream on top of the cupcakes and then go to town on the decorating, I popped some Oreo's on the top of mine and used some remaining crumbs as sprinkles, and voila!!
